Ginger Carrot Soup


  • carrots:  one pound
  • onion:  one diced
  • ginger:  1T grated
  • butter:  1T
  • chicken stock: 2 cups
  • whipped cream:  1/4 cup
  • salt, pepper & cayenne to taste

Saute onions in butter.  Add carrots, ginger and chicken stock.  Simmer until carrots are soft.  Blend and add whipped cream, seasonings and more grated ginger to taste.
